Vitamin D deficiency is a serious problem for many people and linked to everything from heart disease to depression. By placing mushrooms in direct sunlight for 1 hour prior to cooking, you will be able to get your daily recommended intake of vitamin D in one hit as these beauties will absorb the vitamin D for us. WOW!
Thyme Baked mushrooms
Gluten-free, dairy-free, vegetarian, vegan, nut-free, no added sugar
1 Tbsp butter or olive oil spread
800 grams large portabello mushrooms (8 x 100g)
1 shallots, thinly sliced (white part and tips of green part)
1 tsp thyme leaves, finely chopped
½ tsp salt
¼ tsp pepper
Per serving: 71 calories, 4.4g protein, 5.4g net carbohydrates, 2.8g fiber, 3.6g total fat.
