The weather in Sydney is unusually warm for this time of year, which is inspiring me to create new and exciting fresh recipes that are beautifully fragrant & delicious. Salmon is not something I typically crave in winter but once the sun starts warming my skin, the idea of alfresco lunches on the weekend sounds delightful.
Fresh green vegetables are always perfectly in season during Spring-time too, so here is my latest creation. I hope you enjoy it as much as I did last weekend with my family.
Salmon fillet and spring vegetables with a horseradish cream (GF)
Fresh, fragrant and delicious! A perfect mid-week meal but also elegant for an alfresco lunch or dinner party with friends and family.
Nutritionally, this dish as has it all...
Salmon: an oily fish that is loaded with healthy fats (omega-3), which aids in brain function and concentration (head fog). Particularly if you are pregnant/breastfeeding or have growing children, omega-3 is so important for the development of the brain and nervous system.
Green leafy vegetables, such as the spinach featured in this recipe, is high in iron and folic acid. Again, very important for the development of a baby's brain. So ladies if you are thinking of becoming pregnant, are pregnant or are breastfeeding, this meal is one that should be on your weekly repertoire.
500 grams 4 x 125g salmon fillets
¼ tsp salt
1 pinch pepper
lemon wedges to serve
300 grams green beans, fresh or frozen
300 grams zucchini, diced
100 grams frozen spinach
100 grams baby spinach leaves
30 grams Gravox instant cheese sauce powder or 120g light Philadelphia cream cheese
150 ml water
2 tsp horseradish cream (e.g. by Masterfoods) or 1/2 horseradish cream, 1/2 Dijon mustard
1-2 Tbsp chives, snipped
Per serving: 295 calories, 28.8g protein, 7.4g net carbohydrates, 4.3g fiber, 15.3g total fat.
Use spring vegetables of your choice, e.g. what is in season or what you have on hand, e.g. asparagus, cabbage, snow peas, brocollini.
