Our skinny baked strawberry cheesecake is a lighter and healthier version that is low in fat, sugar and calories. The strawberries on top make this cheesecake fresh and light and add nutritional value in the form of antioxidants, as well as vitamin C, dietary fibre and folate. We think it is just as delicious as the original.
Serve it as a treat for when friends come around for dinner. You can enjoy this guilt-free and be comfortable knowing that you are sticking to your healthy diet plan and everybody at your dinner table will be happy because it tastes yummy!
100g Italian sponge fingers (about 12)
750g Pantalica light smooth ricotta
250g Philadelphia extra light cream cheese
½ cup caster sugar (100g)
½ cup stevia for baking (30g)
rind from 2 lemons, grated
rind from 2 oranges, grated
¼ cup lemon juice, freshly squeezed (60ml)
1 Tbsp vanilla extract
½ cup cornflour (75g)
4 egg whites (120g)
100g strawberry jam, 60% less sugar, by IXL
500g strawberries, huled and halved
Nutrition (per serving): 223 calories, 13.6g protein, 28.3g net carbohydrates, 5.2g total fat.
Swap strawberries for whatever berries are in season or try apricot jam and canned apricots in natural juice, drained.
