The first thing you think about when vitamin C is mentioned is citrus fruit, especially an orange. But, is this the best choice.
How about we compare an orange and red capsicum per 100 grams?
* Red capsicum has 3 times the amount of Vitamin C than an orange.
* Red capsicum has 1/2 the amount of calories than an orange.
* Red capsicum has 1/2 the amount of sugar (3.5g) than an orange (8g).
And the winner is RED CAPSICUM!
Next time you reach for the fruit bowl, perhaps re-think your snack choice and opt for sticks of capsicum instead.
Maximise the benefit by pairing roasted red capsicum with lean grilled red meat, such as a barbecued steak. The vitamin C will aid in increasing the iron absorption from the steak.
Our favourite side dish that heroes red capsicum is PIPERADE.
Here is the recipe...
Piperade (Gluten-free, Vegetarian, Vegan, Dairy-free)
A French side dish full of lovely Provencal flavours. Pairs perfectly will grilled meat or a fish fillet.
1 tsp olive oil
1 onion, thinly sliced
2 small capsicums, thinly sliced
200 grams tomatoes, diced
1 tsp salt
1 tsp sugar
1 Tbsp balsamic vinegar
1 Tbsp basil leaves, chopped
1 Tbsp parsley, finely chopped
2 Tbsp oregano leaves, chopped
1 Heat olive oil in a large saucepan. Sauté onion and capsicum until slightly softened.
2 Add tomatoes, salt, sugar, vinegar and herbs. Simmer for 20 mins or until slightly glazed.
Yield: Approx. 100g per serve
Nutrition (per serving): 53 calories, 1.3g protein, 6.7g net carbohydrates, 2.5g fiber, 1.4g total fat.
* Store leftovers in an airtight container in the fridge for 3-4 days.
