Here is one of our favourite breakfast recipes - think outside the box:
It has >20g of protein and more than a 1/3 of your daily requirement of fibre - we think this is a winner! Not to mention it is damn delicious!
Can you smell it??? Think of warm cinnamon-spiced pumpkin pie on a cold day to warm you up!
Spiced pumpkin yoghurt parfait (GF, V)
When most people think of a yoghurt based breakfast, they think about fruit. But why not have a serve or two of vegetables for breakfast instead. Pumpkin is naturally sweet, and is also high in fibre & potassium. It pairs lovely with cinnamon. And when combined with the creamy yoghurt, it is simply delicious!
150 grams pumpkin
1 tsp sugar-free maple syrup (5g)
1-2 Tbsp water
¼ tsp cinnamon or mixed spice
200 grams Tamar Valley no fat natural yoghurt or Yoplait Forme vanilla yoghurt
20 grams rolled oats or natural muesli
10 grams all-bran
Nutrition (per serving): 290 calories, 20.9g protein, 37.8g net carbohydrates, 9.5g fiber, 2.6g total fat.
* Make pumpkin puree in bulk and store in the fridge in a jar for up to a week.
