Today we are featuring a traditional Indian dish...
Chettinad pepper chicken masala
This dish is a spicy chicken recipe from Chettinad in South India. Dishes from this region are notoriously fiery and thus not for the faint-hearted. But if you can handle it, it is worth it because the flavours are bold.
600 grams chicken breast, diced
2 Tbsp olive or coconut oil
1 tsp black mustard seeds
¼ tsp fennel seeds
2 garlic cloves, crushed
1 tsp ginger, freshly grated
1 cup onions, sliced
handful of curry leaves
1 tsp tomato paste (5g)
1 tsp cumin seeds
2 tsp coriander seeds
1-2 dry red chilli (add more or less to suit your taste)
1 tsp black peppercorns
1 cinnamon stick
3 green cardamon pods
